Recipe: Wild herbs salad
Today I decided to go outside and pick anything green to make a salad (yes, “weeds” included).
Also to my surprise I forgot that I scattered spinach seeds in spring so I found a bunch of them growing already and big.
Ingredients
• Mustard greens
• Chicory leaves
• Dandelion leaves
• Spinach
• Lemon balm
• Chives
• Chives
A free salad without going to the shop.
Salad's dressing
• 1 tablespoon balsamic vinegar
• 3 tablespoons olive oil
• pinch of salt
• 2 tablespoons mustard
• 1 tablespoon honey (I used my homemade dandelion blossom honey, but you can use whatever you like)
Mix well until the salad dressing is emulsified and all the ingredients are combined. You will get a golden brown coloured dressing.
Preparation
Just give the vegetables a good wash, chop them together with other vegetables you may have at home, prepare a salad dressing and enjoy!
How did it go?
The result was amazing, I had never tasted something so nutritious and without having to go to the supermarket and obviously very fresh. It was the first time I had tried dandelion leaves, but to my surprise they were delicious. Of course, I harvested young leaves because the next day I tasted a more mature leaf and it was very bitter. I don’t think everyone likes the taste, but it really is very nutritious.
I have tried chickweed before and it has a very distinctive taste because it tastes like corn and together with dandelion it is a very nutritious plant. Sometimes when I see it in the garden I harvest a small amount and eat it raw while walking in the garden.
And there are more and more wild herbs growing in my garden. But my forage knowledge is limited (working on it) there are certain plants that I am not 100% sure are safe to eat.
